A Unique Take on Cake

Favorite Cake

Lyndel Levy Finholdt, No. 38, Austin, MN

1 pkg. yellow cake mix
½ C oil
4 eggs
1 small can mandarin oranges, undrained

Blend all ingredients together in a medium bowl. Pour mixture into cake pan and bake at 350° for 35 minutes.

Frosting:
9 oz. pkg. Cool Whip
1 small pkg. vanilla instant pudding
1 can semi-drained crushed pineapple

Frosting instructions: Gently cream together Cool Whip, vanilla pudding, and crushed pineapple. Spread on top of cake when cooled. Keep cake refrigerated once cooled.

 

Depression Cake

Virginia Karas, No. 84, Table Rock, NE

1 C raisins 2 C water
2 C flour 1 tsp soda
1 tsp cinnamon 1 C sugar
½ C chopped nuts ½ C shortening

Heat oven to 350°. Stew raisins in water until one cup liquid is left. Then, cream sugar and shortening gradually with the liquid. Add raisins and nuts. Pour in a pan. Sprinkle with the sugar and cinnamon. Bake 45 minutes.

 

Salted Caramel Apple Cake

Karen Ryba, No. 106, Lankin, ND

1 box white cake mix 1¼ C water
⅓ C vegetable oil 3 eggs
20 oz apple pie filling ½ C caramel sauce
1 tsp sea salt ⅓ C butterscotch chips
8 oz whipped topping

Heat oven to 350°. Grease 13 x 9" pan. In large bowl, beat cake mix, water, oil, and eggs with electric beater on low speed for two minutes. Add apple pie filling, then beat one minute longer. Pour into pan. Bake as directed on box. Cool in pan on cooling rack for 20 minutes. Meanwhile, in a small bowl, mix ¼ C caramel sauce and sea salt. Poke warm cake every inch with a straw or handle of wooden spoon, halfway into cake. Pour caramel-salt mixture over cake, allowing it to fill in holes. Spread cake with whipped topping. Drizzle with remaining ¼ C caramel, and top with butterscotch chips.

 

Chocolate Chip Date Cake

Philip Fecteau, No. 181, Seattle, WA

Cook the first three ingredients together for 8 minutes over medium heat in a medium sized kettle. Watch so that it does not boil over.

1 C chopped dates
1 ½ Cups water
1 T baking soda

Cool the date mixture. Cream together:

½ C shortening
1 C sugar

Add the cooled dates to the shortening and sugar.Combine with the below:

1¼ C plus 1 T flour
¼ tsp salt
¼ tsp baking soda

Pour into a 9 x 13 greased cake pan.

The following is the topping that is sprinkled over the cake batter before baking (this is the frosting).

Sprinkle ½ to one 12 oz milk chocolate chips (to taste)
Sprinkle ½ C chopped walnuts
Sprinkle ¼ - ½ C sugar (to taste)
